Course Description

Case strategy integrating therapeutic methods of diet, food procurement, & individual nutrients. Whole foods cooking theory and techniques incorporated. Food economics, whole foods ingredients, menu planning (cost, nutrient content, compliance, cultural influences), specific therapeutic needs and special populations covered.

Intended Outcomes for the course

 
1.Present to clients up to 10 factors in procuring and storing food within at least 3 cultural or academic approaches to whole foods cooking
2.Design menu plans, utilizing therapeutic foods and nutrient intake/deficiency assessment useful within the current American health care system
3.Recall, explain and integrate nomenclature, methodology and procedures of food therapy as applied for health maintenance, acute and chronic conditions, compliance and efficacy
